    Gellan gum is used as a gelling agent in plant cell culture on Petri dishes. Its high transparency allows light microscopical observation of cells and tissues without obstruction. It is also useful for culturing thermophilic microorganisms. It can be used in food, non-food, cosmetic, and pharmaceutical industries. It is widely used as an effective thickening agent and can function both as an emulsifying agent and stabilizer. Indeed, it is used instead of gelatin in manufacturing plant-based “gum” sweets or candies. Gellan gum is also very important for manufacturing plant-based milks that keep suspending plant proteins within the liquid matrix.
